Chipotle Shredded Beef Recipe - Meal Prep Ideas

Ingredients

  • 1 - 2 lbs. Top Round Steak

  • 1 - 2 lbs. Chuck eye Shoulder Roast

  • 3/4 - 1 Cup Red Onion

  • 1 Tbsp. Garlic

  • 3/4 - 1 Cup Cilantro

  • 2 Limes

  • 1/4 Cup BBQ Sauce (if desired)

  • 2 - 3 Tsp. Cumin

  • 2 - 3 Tsp. Oregano

  • 1/3 - 1/2 Cup Chipotle Peppers in Adobo Sauce (only need the sauce)

  • 2 - 3 Tsp. Ancho Chile Powder

  • Salt & Pepper (Pinch)

  • Extra Virgin Olive Oil (1-2 Tbsp.)

  • 2/3 - 3/4 Cup Water

Instructions

  1. Trim any fat & gristle from the meat you can. (Some fat is fine, but try to remove the larger chunks and pieces)

  2. In a skillet, add a few splashes of Extra Virgin Olive Oil.

  3. Turn the burner to a medium-high heat and let the skillet heat up for a few minutes.

  4. Add the meat and season with Salt & Pepper. (You can add additional seasonings and marinades if you would like)

  5. Sear the meat on each side for about 2-3 minutes.

  6. Remove the meat from the skillet and place it into your slow cooker.

Once the meat is in your slow cooker, you can start working on the Chipotle Marinade.

  1. Rinse and dice up 3/4 - 1 Cup Cilantro

  2. Rinse and dice up 3/4 - 1 Cup Red Onion

  3. Put the Cilantro and Red Onion into blender or smoothie blender.

  4. Add 1 Tbsp. Garlic

  5. 1/3 - 1/2 Cup Adobo Sauce

  6. 2/3 - 3/4 Cup Water

  7. Blend these ingredients together for about 15-20 seconds or until smooth.

  8. Add the marinade mixture to the meat in your slow cooker.

After you've added the marinade you can now add the Chipotle Seasoning Mixture

  1. Add 2-3 Tsp. Cumin

  2. Add 2-3 Tsp. Oregano

  3. Add 2-3 Tsp. Ancho Chile Powder

  4. Add a Pinch of Salt & Pepper

  5. Add 2 Limes, cut into 1/4 pieces before adding them.

  6. Add 1/4 Cup BBQ sauce. (if desired)

Now all you have to do is cook the meat.

  1. Cook on low for 9-10 hours. (cook time may vary slightly)

  2. Once it's done, remove the limes, and shred the meat up. (to shred the meat you can use 2 forks or several other utensils, whatever works best for you.
