Broccoli Salad Recipe | Meal Prep Ideas
Delicious Broccoli Salad Recipe! Meal prep this for a low calorie lunch, dinner or even an afternoon snack. I really enjoyed it.

5-6 Cups Broccoli Florets (1 - 1 1/2lbs)
3/4 Cup Sharp Cheddar Cheese
2/3 Cup Dried Cranberries
1/2 Cup Sunflower Seeds
1/3 Cup Diced Red Onion
1/2 - 2/3 Cup Light Mayo.
1/4 - 1/2 Cup Plain Greek Yogurt
1 1/2 Tbsp. White Wine Vinegar
1-2 Tbsp. Stevia
Pinch of Salt & Pepper
Rinse and chop Broccoli crowns into smaller pieces. (Bite size pieces)
Place the chopped broccoli into a large mixing bowl.
Add 3/4 Cup Sharp Cheddar.
Add 1/2 Cup Sunflower Seeds.
Add 2/3 Cup Dried Cranberries.
Add 1/3 Cup Red Onion.
Mix ingredients together with a large wooden spoon or similar cooking utensil.
Add 1/2 - 2/3 Cup Light Mayo.
Add 1/4 - 1/2 Cup Plain Greek Yogurt.
Add 1 1/2 Tbsp. White Wine Vinegar.
Add 1-2 Tbsp. Stevia.
Add a pinch of Salt and Pepper.
Mix ingredients together thoroughly to ensure all the broccoli gets covered with dressing. (I used a rubber spatula to mix the ingredients together)
Nutrition (Serving Size: 210g - 215g)

**Servings - I split this recipe into 5 servings of 210-215g (You could split it up differently if you would like though) **
