Broccoli Salad Recipe | Meal Prep Ideas

Delicious Broccoli Salad Recipe! Meal prep this for a low calorie lunch, dinner or even an afternoon snack. I really enjoyed it.

Recipe

Ingredients

  • 5-6 Cups Broccoli Florets (1 - 1 1/2lbs)

  • 3/4 Cup Sharp Cheddar Cheese

  • 2/3 Cup Dried Cranberries

  • 1/2 Cup Sunflower Seeds

  • 1/3 Cup Diced Red Onion

Dressing Ingredients

  • 1/2 - 2/3 Cup Light Mayo.

  • 1/4 - 1/2 Cup Plain Greek Yogurt

  • 1 1/2 Tbsp. White Wine Vinegar

  • 1-2 Tbsp. Stevia

  • Pinch of Salt & Pepper

Instructions

  1. Rinse and chop Broccoli crowns into smaller pieces. (Bite size pieces)

  2. Place the chopped broccoli into a large mixing bowl.

  3. Add 3/4 Cup Sharp Cheddar.

  4. Add 1/2 Cup Sunflower Seeds.

  5. Add 2/3 Cup Dried Cranberries.

  6. Add 1/3 Cup Red Onion.

  7. Mix ingredients together with a large wooden spoon or similar cooking utensil.

  8. Add 1/2 - 2/3 Cup Light Mayo.

  9. Add 1/4 - 1/2 Cup Plain Greek Yogurt.

  10. Add 1 1/2 Tbsp. White Wine Vinegar.

  11. Add 1-2 Tbsp. Stevia.

  12. Add a pinch of Salt and Pepper.

  13. Mix ingredients together thoroughly to ensure all the broccoli gets covered with dressing. (I used a rubber spatula to mix the ingredients together)

**Servings - I split this recipe into 5 servings of 210-215g (You could split it up differently if you would like though) **
